Leftover roasted carrots get pureed with pineapple jam, folded with diced apples and oats to trasform into a moist, spicy loaf unlike any other! Ingredients:
1 cup rolled oats |
1 cup whole wheat flour |
1 tbsp baking powder |
1/4 tsp salt |
2 tsp cinnamon |
1/2 tsp nutmeg |
1/2 tsp ground ginger |
1/4 cup ground flaxseed |
1/4 cup hot water |
1/3 cup brown sugar |
1 cup coconut milk |
1/2 cup pureed roasted carrots |
2 tbsp pineapple jam |
1 tbsp vanilla |
1 large apple, peeled and diced |
Directions:
1. Preheat oven to 350F, grease a loaf pan. 2. In a bowl, whisk together oats, flour, baking powder, salt, cinnamon, nutmeg and ginger. Set aside. 3. In a large bowl, whisk together flaxseed and water, let stand 5 minutes. 4. Add sugar, coconut milk, carrots, jam and vanilla. Stir until well blended. 5. Add dry ingredients and mix in, then fold in the apple until just mixed - do not beat. 6. Bake 55-60 minutes, until tests done. 7. Cool in the pan 20 minutes before unmoulding onto a rack and cooling completely. |
