Perfect Sunday hangover dish to be shared with loved ones. Ingredients:
4 corn tortillas |
1/4 cup white wine |
4 poached eggs |
2 cups sauteed mushrooms |
1 cup sauteed onions |
1 head chopped garlic |
2 large tomatoes |
cayenne |
peppers |
2 ripe avocados |
1 1/2 cups shredded gouda |
bowl raspberry chipotle salsa |
Directions:
1. Lay out frozen homemade corn tortillas to defrost 2. chop mushrooms, onions, garlic, peppers and saute on medium heat 3. add dash of white wine to veggies 4. while sauteing, lightly poach eggies 5. shred gouda 6. slice ripe avocados 7. warm tortillas in oven 8. Place one egg per on top of warm tortillas 9. dash of cayenne 10. add sauteed veggies on top of egg 11. add gouda on top of veggies 12. place slices of avocado on side 13. dollop salsa on side |
