Sunday Roast of Beef (British Style) |

Ingredients:
1 tablespoon(s) butter |
3 clove(s) garlic, peeled and left whole |
1 cup(s) liquid, wine, water, stock, etc. |
3 tablespoon(s) oil |
1 onion, large |
vegetables to roast (carrots, parsnips, potatoes, etc. |
Directions:
1. Melt oil and butter on medium low heat in roasting pan. Brown roast on all sides. Cut onion into eighths and add to pan. Cook two minutes. The browning will take approximately 1/2 hour. This stem helps the roast stay moist through the long, slow cooking. Add garlic and liquid and cover. Place in a 350 F oven and roast for 1/2 hour. Reduce heat to 325 F and continue roasting for four hours. One hour before end of cooking time add vegetables to roasting pan, if desired. Remove from oven and let sit 15 20 minutes before carving. Use a carving fork to shred, if desired. |
