Sunday Morning Chocolate Chip Pancakes |

Here's the wholesome and hearty pancake breakfast we had this morning. If you don't care for chocolate chips, try fresh banana slices. These pancakes are great with warm butter and real maple syrup! Ingredients:
1 cup whole wheat flour |
1 cup all-purpose flour |
4 teaspoons sugar |
1 teaspoon salt |
1 1/2 teaspoons baking powder |
1 teaspoon baking soda |
1/2 teaspoon cinnamon |
3 eggs |
2 cups buttermilk |
2 tablespoons canola oil |
1 cup chocolate chips |
vegie cooking spray |
Directions:
1. I place my wire mesh colander over a mixing bowl and place all the dry ingredients in that so it will sift as I measure into it. 2. Or you can sift all dry ingredients into one bowl. 3. In another mixing bowl, slightly beat three eggs and mix with the buttermilk and oil. 4. Then fold in the dry ingredients and stir just until all is incorporated. 5. *Do not over stir or your pancakes will be tough. 6. Let the batter rest for 10 minutes, or more. 7. Heat a griddle or skillet over medium heat and lightly grease with either spray or butter. 8. Spoon the batter onto the hot griddle and sprinkle with chocolate chips. 9. Turn when little bubbles appear. 10. Cook for another 3-5 minutes. 11. Serve warm. |
