1 lb lean turkey italian sausage |
1 lb chicken breasts, cubed |
3 t vegetable oil |
1 red pepper, chopped |
1 onion, chopped |
3 stalk,+medium+7-1/2 +-+8 +long celery ribs |
1 t marjoram |
1 t thyme |
1/2 t garlic powder |
1/2 t cayenne pepper |
43 1/2 oz fat free reduced sodium chicken broth |
2/3 c uncooked brown rice |
14 1/2 oz can diced tomatoes |
1 lb uncooked shrimp |
2 c okra, frozen |
Directions:
1. Brown sausage and chicken in oil. Remove and keep warm. In the drippings, saute red pepper, onion, and celery together until tender. Stir in seasonings; cook 5 min. Stir in broth, rice, sausages, and chicken; bring to a boil. Reduce heat; cover and simmer for 20-25 min. or until rice is tender. Stir in tomatoes, shrimp and okra; cook for 10 min or until shrimp turn pink, stirring occasionally. 2. Makes about 4 quarts (16 servings). |
