Ingredients:
4 potatoes boiled
1/4 cup vegetable oil
1/2 cup diced cooked ham
1/4 cup sliced white onion
1/4 cup thinly sliced green pepper
2 tablespoons diced pimento
6 eggs beaten
1/4 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 cup finely diced swiss cheese
3 tablespoons chopped parsley
Directions:
1. Peel potatoes and cut into small cubes.
2. In skillet heat oil over medium heat then add potatoes and fry until evenly browned.
3. Add ham, onion, green pepper and pimento then cook stirring occasionally until vegetables are crisp tender.
4. In bowl combine eggs, salt and pepper then add to potato mixture.
5. Stir in diced cheese.
6. Cook stirring occasionally until eggs are cooked and cheese begins to melt.
7. Sprinkle with chopped parsley.
