Sun-Dried Tomato Vinaigrette |

If you have sun dried tomatoes and basil on hand this is a fast vinaigrette to make. Ingredients:
4 ounces sun-dried tomatoes packed in oil |
1/2 cup olive oil |
1/2 cup red wine vinegar |
1 cup fresh basil, minced |
1 tablespoon garlic, minced |
1/2 cup green onion, chopped |
salt and pepper |
Directions:
1. Place all ingredients in blender (salt and pepper to taste) and blend until creamy. 2. Serve on tossed green salad, garden fresh vegetables, or other salad of your choice. |
