Sun-Dried Tomato Vinaigrette

If you have sun dried tomatoes and basil on hand this is a fast vinaigrette to make.
Ingredients:
4 ounces sun-dried tomatoes packed in oil
1/2 cup olive oil
1/2 cup red wine vinegar
1 cup fresh basil, minced
1 tablespoon garlic, minced
1/2 cup green onion, chopped
salt and pepper
Directions:
1. Place all ingredients in blender (salt and pepper to taste) and blend until creamy.
2. Serve on tossed green salad, garden fresh vegetables, or other salad of your choice.
