1/4 cup sun-dried tomato packed in oil |
2 tablespoons balsamic vinegar |
1 garlic clove, minced |
1 teaspoon dried oregano |
1/2 teaspoon granulated sugar |
1/4 teaspoon pepper |
1 pinch salt (optional) |
1/2 cup extra virgin olive oil |
Directions:
1. rinse sun'dried tomatoes and pat dry. 2. Finely chop and place in small bowl. 3. Add 1/2 cup of water, oregano garlic, sugar, pepper, and salt if using. 4. Wisk to combine. 5. Whisking constantly drizzle in oil in slow steady stream until combined. 6. **can be made ahead and stored in the fridge for up to a week. |
