Serve this over cooked pasta, top burgers, ladle on pizza dough instead of sauce or spread on sandwich rolls. Each serving is 2 tablespoons. I found this recipe in Woman's Day magazine. I have not tried this recipe, but I'm posting it for safe keeping. Ingredients:
1/2 cup shelled walnuts |
8 1/2 ounces sun-dried tomatoes packed in oil (trader joe's recommended) |
2 garlic cloves |
2 tablespoons tomato paste |
2 tablespoons olive oil |
1/2 cup grated parmesan cheese |
1/4 teaspoon fresh ground pepper |
Directions:
1. Place walnuts on paper plate; microwave on high about 2 minutes until fragrant and toasted. Let cool. 2. Pulse sun-dried tomatoes and their oil, garlic, walnuts, tomato paste and olive oil in food processor until finely chopped. Transfer to large bowl; stir in Parmesan and pepper. |
