2 cups chopped dried tomatoes |
1/2 cup olive oil |
1 large clove garlic |
2 cups fresh basil |
1 tablespoon dried oregano |
1/4 cup pine nuts (optional) |
Directions:
1. Combine ingredients in a blender or food processor and puree. 2. Pack pesto tightly into a glass jar and cover with a thin layer of olive oil. Use as needed and keep refrigerated. 3. Great on pasta, grilled chicken and vegetables. |
