Sun-Dried Tomato Dressing |

This is a thick and tangy sun dried tomato dressing that is lovely on a tossed green salad. Ingredients:
1 small red pepper |
2 plum tomatoes, coarsely chopped |
1 small onion, chopped |
3 tablespoons chopped fresh basil |
2 garlic cloves, peeled |
1/4 teaspoon dry crushed red pepper |
1 (8 ounce) jar sun-dried tomatoes packed in oil, drained, cut into strips |
3/4 cup water |
1/4 cup whipping cream |
1/4 cup red wine vinegar |
3 tablespoons fresh lemon juice |
1/3 cup vegetable oil |
Directions:
1. Char bell pepper over gas flame or in a broler until blackened all over. 2. Enclose in a paper bag and let stand 10 minutes. 3. Peel and seed; coarsely chop. 4. Combine bell pepper and next 5 ingredients ina food processor. 5. Blend until almost smooth. 6. Transfer to a medium bowl. 7. Mix sun dried tomatoes, 3/4 cup water, cream, vinegar and lemon juice in food processor. 8. With machine running, add oil; blend until almost smooth. 9. Whisk sun dried tomato mixture into bell pepper mixture. |
