From my friend Maureen - A little different from other sun-dried tomato dips because of the goat cheese and fresh herb. Ingredients:
3 tablespoons drained oil-packed sun-dried tomatoes |
2 tablespoons low-fat buttermilk (1%) |
2 teaspoons chopped fresh thyme |
1 garlic clove, chopped |
1 (8 ounce) tub light cream cheese |
1 (4 ounce) package goat cheese |
Directions:
1. Combine tomatoes, buttermilk, thyme, garlic and half of the cream cheese in a food processor; process until smooth. 2. Add remaining cream cheese and goat cheese and process until well blended. 3. Cover and chill until ready to serve with crostini or assorted vegetables. 4. Yield: 1 3/4 cups |
