2 sun-dried tomatoes (not in oil) |
1/2 cup thinly sliced celery |
2 tablespoons thinly sliced green onions |
2 garlic cloves, minced |
2 (15 ounce) cans chicken broth |
2 ounces linguine, broken into 2-3 inch pieces |
1 -2 teaspoon lemon juice |
salt and pepper |
Directions:
1. Place tomatoes in a small bowl. Pour hot water over to cover. Let stand until softened, about 15 minutes; drain. Coarsely chop tomatoes. 2. Spray medium saucepan with cooking spray; heat over medium heat until hot. Sauté celery, green onions and garlic until tender, 5-7 minutes. 3. Stir in chicken broth; heat to boiling. 4. Add linguine and tomatoes to boiling broth. Reduce heat and simmer, uncovered, until pasta is al dente, about 10 minutes. 5. Season with lemon juice, salt and pepper. |
