From 1001 Low Fat Vegetarian. Ingredients:
3 sun-dried tomatoes (not in oil) |
hot water |
2 tablespoons olive oil |
2 tablespoons white wine vinegar |
2 tablespoons lemon juice |
1 tablespoon goat cheese |
2 garlic cloves, minced |
1/2 teaspoon dried marjoram |
1/8 teaspoon dried thyme |
salt and pepper |
Directions:
1. Place tomatoes in a small bowl. Cover with hot water. Let stand until softened, about 15 minutes. Drain and finely chop. 2. Mix tomatoes and remaining ingredients. Refrigerate until serving time. 3. Mix again before serving. |
