Sun-dried Tomato And Basil Vinaigrette |

This is a great dressing for pasta salad or tortellini salad. Also, a chicken and tortellini salad dressing. Ingredients:
4 sun-dried tomato halves, not packed in oil |
1/2 cup chicken broth |
2 tablespoons finely chopped fresh basil |
2 tablespoons olive oil |
2 tablespoons fresh lemon juice |
2 tablespoons water |
1 clove garlic, minced |
salt and pepper to taste, just about 1/4 teaspoon each |
Directions:
1. Place sun-dried tomatoes in a small bowl. 2. Pour hot water over tomatoes to cover. 3. Let stand 10-15 minutes until soft. 4. Drain well and chop. 5. In a small jar with a tight-fitting lid, combine tomatoes and all other ingredients. 6. Shake well. 7. Refrigerate 2 hours and shake well before using. 8. Makes about 1 cup of vinaigrette. |
