Ingredients:
1 cup butter, softened |
2 cups all-purpose flour |
1/2 cup powdered sugar |
1 tablespoon grated fresh lemon rind |
4 large eggs |
2 cups sugar |
6 tablespoons strained lemon juice |
1 tablespoon grated fresh lemon rind |
1 tablespoon all-purpose flour |
1/2 teaspoon baking powder |
powdered sugar |
Directions:
1. Pastry: Blend ingredients and pat into bottom of a jelly-roll pan. 2. Bake in preheated 325° oven for 15 minutes. 3. Topping: In a mixing bowl, beat eggs lightly with a fork. 4. Add remaining ingredients (except powdered sugar). 5. Mix well and pour on top of baked pastry. 6. Bake in preheated 325° oven for 40 minutes. 7. Remove from oven and sprinkle with powdered sugar. 8. Cool and cut into squares. |
