Summertime Stove-Top Meatloaf |

Have you ever had a hankering for meatloaf but it's just too hot to turn the oven on? My SIL gave me this recipe for just such occasions. Ingredients:
1 (8 ounce) can tomato sauce |
8 -16 ounces water |
1 (16 ounce) can tomatoes |
3 -4 bay leaves |
2 lbs ground sirloin |
1 chopped onion |
2 -3 carrots, shredded |
2 beaten eggs |
1/2 cup flour (a handful, not crumbs) |
garlic powder |
salt and pepper |
Directions:
1. In a dutch oven, combine the tomato sauce, water and tomatoes. Mix well. Sauce should be diluted until like soup. You want 2-3 inches of liquid in pot. Add the bay leaves. 2. In a bowl combine and mix well: the ground sirloin, onion, carrots, and eggs. Sprinkle the flour over the meat to hold everything together. Add seasonings to taste. Mix well. 3. Shape the meat mixture into three loaves or balls. Place in Dutch oven. 4. Bring to a boil, reduce heat and simmer slowly, covered, about 1-1/2 hours or until done. Check occasionally to make sure sauce is not getting real thick. Add water as necessary. 5. This freezes nicely. |
