Summertime Chicken Salad

This refreshing chicken salad is great during the summer. It is light tasting with crunch and a light sweetness to it. Goes great on Croissants or Romain lettuce
Ingredients:
2 1/2 cups diced cold chicken breasts
1 cup celery chopped fine
1 cup sliced red or white grapes
1/2 cup sliverd almonds toasted
2 tbs minced parsley
1 tsp salt (to taste)
3/4 cup of mayonnase (real mayo not salad dressing)
3/4 cup cool whip
Directions:
1. Season chicken breasts to taste
2. Bake chicken 400 for 20-25 min depending on thickness
3. Cube or pull COLD chicken breasts
4. Mix the rest of the ingredients with chicken
5. Serve over Romain lettuce leaves or Croissants
