Summer's Bounty Chicken Salad

Using leftovers from the garden and leftover cooked chicken ,I made this tasty chicken salad with a plum mayo- delicious, hope you like this. Please note one can add whatever vege one prefers to the chicken, which would work well for one's taste
Ingredients:
3-4 cups cooked cut up chicken ( white and dark meat )
1/2 cup coarse chopped cooked green beans
1 small red or green bell pepper chopped
6 cherry tomatoes chopped
2 tbs chopped onion or chives
1/2 raw carrot chopped
1 tbs chopped fresh herbs ( parsley, basil etc what you like )
dressing
mayonnaise, enough to bind, start with approx. 1/2 cup
1 tbs plum jam or to taste
salt and black pepper to taste
optional garnish: leaf lettuce, avocado, tomatoes etc
Directions:
1. Combine all chicken salad ingredients
2. Blend mayo with plum jam till smooth
3. Stir into chicken mixture.
4. Season to taste with salt and pepper
5. Serve as is or over a bed of lettuce, with tomatoes, sliced avocado and even some fresh sliced plums for color, taste and texture
