A wonderful sweet and sour salad with a hint of fresh parsley flavor. I had this salad for lunch and couldn't wait to post it. Bursting with flavor and refreshment! Ingredients:
2 tablespoons of extra virgin olive oil |
2 tablespoons of balsamic vinegar |
salt and white pepper |
2 cups of cold, bite-size, seedless watermelon cubes |
1/2 cup of coarsely grated of small cubed queso fresco or feta cheese |
2 tablespoons of minced fresh italian parsley |
4 black pitted greek kalamata olives. |
Directions:
1. Shake together, the olive oil, vinegar, salt and pepper to make a vinaigrette. 2. Gently toss the watermelon cubes, cheese and parsley with the vinaigrette. 3. Serve cold on Bibb lettuce leaf; garnished with pitted Greek Kalamata olives. |
