This recipe came from my friends Wendy and Robin. They are fabulous, the recipe is fabulous. Coincidence? I think NOT. :-) If you want to make 1 or 2, just keep the watermelon chunks in the freezer until they're ready to use and muddle them in the glass or throw in a small blender or food processor. Ingredients:
20 mint leaves, chopped |
2 tablespoons superfine sugar |
1/2 cup fresh lime juice |
crushed ice |
3/4 cup light rum |
6 ounces seedless watermelon, pureed |
Directions:
1. In the bottom of a large shaker, muddle the mint, sugar and 1/4 cup of the lime juice. 2. Fill the shaker with ice. 3. Add the rum, watermelon and the remaining 1/4 cup of lime juice; shake well. Strain into old-fashioned glasses over ice. |
