This is a light vinaigrette to make when you have fresh basil. Combined with safllower oil,it tastes so fresh and light. Wonderful to drizzle on any salad and perfection on a ripe tomato Ingredients:
1/2 cup basil, chopped |
2 garlic cloves, crushed |
2 tablespoons fresh lemon juice |
1/4 cup white balsamic vinegar |
1/4 teaspoon salt |
1/4 teaspoon pepper, freshly crused |
1/2 cup safflower oil |
Directions:
1. In blender or food processor combine basil, garlic, lemon juice,salt, pepper and balsamic vinegar. 2. Process to until well blended. 3. While motor slowly add oil. 4. Taste to see if you need to add salt or pepper. 5. Enjoy the taste of summer. |
