For a garden gone wild. Ingredients:
2 tablespoons butter |
1 tablespoon vegetable oil |
1/2 cup chopped yellow onion |
1 -2 garlic clove, minced |
1 red bell pepper, seeded and cut into 1-inch pieces |
8 ounces mushrooms, quartered |
2 zucchini, unpeeled and cut into 1/2-inch slices |
1 1/2 cups fresh corn kernels |
1/2 teaspoon salt (or to taste) |
fresh ground black pepper, to taste |
1 tablespoon chopped fresh basil |
Directions:
1. In a large skillet over medium heat; melt the butter with the oil. 2. Add in the onion, garlic, bell pepper, mushrooms, and zucchini; stir/saute for 5 minutes. 3. Add in the corn, salt, pepper, and basil; saute about 5 minutes or until the vegtables are tender; serve immediately. |
