Prep: 15 minutes. Use half of a 16-ounce loaf of sliced French bread, or slice the loaf yourself into 3/4-inch-thick slices. Ingredients:
3 tablespoons pesto |
1/4 cup fat-free mayonnaise |
2 teaspoons balsamic vinegar |
1 teaspoon bottled minced garlic |
1/4 teaspoon dry mustard |
1 green onion, chopped |
1/8 teaspoon freshly ground black pepper |
8 (1-ounce) slices french bread, toasted |
1 cup spinach leaves or gourmet salad greens |
8 (1/4-inch-thick) slices tomato |
Directions:
1. Combine first 7 ingredients in a small bowl; stir with a whisk. 2. Spread mayonnaise mixture evenly on 4 slices of bread (about 2 tablespoons per slice). Place 1/4 cup spinach leaves on each bread slice; top each with 2 slices tomato. Top with remaining bread slices. |
