Summer Tomato Fruit Salsa |

A fresh tomato salsa made in the late summer with abundant fresh tomatoes and peaches. Ingredients:
5-7 fresh tomatoes (from someone's garden - not a store) |
1+ large valdalia or other sweet onion |
2-3 fresh peaches |
1-3 fresh plums |
1- fresh jalepenos |
1-2 green/red/yellow bell peppers |
lots of cilantro |
juice from 2-4 limes |
some olive oil (sometimes i use none) |
1-3 tsp ground corriander (optional) |
salt and pepper (freshly ground) to taste |
tortilla chips (or whatever you like to eat salsa with) |
Directions:
1. Chop all vegetables into salsa-sized portions 2. Chop cilantro as fine as you like (but not too fine) 3. Put in a big bowl and add lime juice, olive oil, corriander (if using). 4. Add any additional spices not mentioned, but be careful, the key is fresh salsa 5. Mix gently and refrigerate (or not). 6. Serve with chips or to accompany grilled chicken or fish. 7. Modify ingredient list to suit your taste, but the peach adds sweetness and the plum adds a bit of tartness and mouthfeel. Mangos are a good substitute if you cannot find fresh peaches or plums. 8. Do not even attempt in the winter or with store-bought vegetables. I only make it 2-3 month a year (sadly). |
