Ingredients:
1 yellow squash, sliced
1 zucchini, sliced
2 tomatoes, sliced
1 onion, sliced
1 cup uncooked rice
1/4 cup brown sugar
1/3 cup butter, melted
1 salt
1 pepper
Directions:
1. Sprinkle rice on the bottom of a buttered 2 quart casserole.
2. Layer vegetables on top of rice, sprinkling with brown sugar, salt, pepper and melted butter.
3. Cover and cook in the microwave oven about 10 minutes, rotating casserole once (check before done as microwave ovens differ).
4. If using conventional oven, add 3 tablespoons of water and bake at 325 degrees for about 45 minutes.
5. NOTE: for Rice, use instant or minute rice
