Ingredients:
6 small yellow summer squash, cut into 1/2-inch slices
1 large sweet onion, chopped
1 garlic clove, minced
1 tablespoon olive oil
1 tablespoon butter
1/2 teaspoon salt
1/2 teaspoon pepper
Directions:
1. In a large skillet, saute the squash, onion and garlic in oil and butter for 10-12 minutes or until tender. Sprinkle with salt and pepper. Yield: 8 servings.
