Haven't tried this yet, but sounds good. Got this out of Weight Watcher cookbook. 3/4 cup=1pt or 76 calories. Ingredients:
2 teaspoons extra virgin olive oil |
1 zucchini, thinly sliced |
1 yellow squash, thinly sliced |
3 garlic cloves |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1 cup diced seeded tomato |
1/4 cup parmesan cheese |
Directions:
1. Sauté zucchini, yellow squash, garlic, salt and pepper about 5 minutes. 2. Add tomato and sauté 2 minutes. 3. Sprinkle with cheese and serve. |
