Summer squash and orange pepper give this herby side dish fantastic color. Remember this recipeâit complements almost any main dish. âShirley Warren, Thiensville, WI Ingredients:
2 yellow summer squash, halved lengthwise and cut into 1/4-inch slices |
1 medium sweet orange pepper, cut into thin strips |
2 tablespoons butter |
3 green onions, chopped |
2 teaspoons brown sugar |
2 teaspoons lemon juice |
1/2 teaspoon dried basil |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Saute squash and orange pepper in butter in a large skillet until crisp-tender. Add remaining ingredients; cook 4-5 minutes longer or until sugar is dissolved and vegetables are tender. Yield: 4 servings. |
