I got this recipe from the Dream Dinners web site. This is a great dish to use the squash from your garden. It goes well with chicken,beef or pork. Very flavorful. My kids love it as well. Ingredients:
2 medium onions, sliced 1/4 thin |
2 tbsp. olive oil |
5 plum tomatoes, sliced thin |
2 zucchini 6 -8 sliced 1/4 thin |
2 yellow summer sqash 6 -8 sliced 1/4 thin |
1/2 tsp. black pepper |
1 tsp. salt |
2 tbsp. fresh thyme, stems removed, chopped |
1/2 c grated parmesan cheese |
Directions:
1. Saute onions in large frying pan with 1 Tbsp. olive oil over medium heat untill beginning to turn brown. Approx 12-15 minutes. 2. Spray 9 x13 baking baking pan. 3. Place tomatoes in single layer on the bottom of the baking pan 4. Place zucchini in a single layer over the tomatoes 5. Place yellow summer squash over the zucchini 6. Place sauteed onions evenly over the yellow squash 7. Drizzle with 1 Tbsp. olive oil, add salt and pepper and top with cheese 8. Cover dish and bake at 350 F. for 60 min or until chesse is melted and vegetables are tender. |
