This is a recipe I found in a magazine and have not tried but wanted to post to save. All the ingredients make me think this is a very tasty dish Ingredients:
2 cups yellow squash |
1 zucchini |
1/2 lb mushroom |
1 onion |
2 tablespoons olive oil |
2 cups cheese |
10 3/4 ounces mushroom soup |
1/2 cup sour cream |
1/2 teaspoon salt |
1 cup cracker |
1 tablespoon butter |
Directions:
1. Thinly slice yellow squash and zucchin. Wash and slice mushrooms. Slice onion. In sauce pan add olive oil and saute all above. DRAIN. Combine vegetables , 2 cups grated cheese, 1 can mushroom soup, 1/2 cup sour cream and 1/2 teaspoon salt. Grease a casserole and add all. Crush crackers like ritz and mix in 1 tablespoon butter. Put on top of vegetables. Bake 25-30 minutes in 350 degree oven. |
