I have not tried this recipe. I got it from my nephew's Head Start Newsletter. Ingredients:
3 cups summer squash, chopped (zucchini, yellow or chayote) |
1 cup cracker crumb |
1 cup low-fat cheese, shredded |
2 tablespoons margarine, melted |
2 tablespoons onions, chopped |
2 eggs, beaten |
Directions:
1. Combine all ingredients in large bowl. 2. Mix well. 3. Pour into greased baking dish. 4. Cover. 5. Bake 1 hour at 350°. |
