Summer Squash-cheese Bake |

3 different vegetables, cheese, and herbs. this is the original recipe, but I add quite a bit more herbs. Ingredients:
3 med yellow squash, thinly sliced |
6 t butter |
1/2 lb spinach |
3 med tomatoes, sliced |
2 c cottage cheese |
1 1/2 c crumbled crackers e.g. ritz |
1/4 t oregano |
1/4 t parsley |
1/4 t basil |
1/4 t minced garlic |
6 slices provolone |
Directions:
1. saute squash in 2 T butter, set aside 2. tear spinach into pieces, saute in 2 T butter, set aside 3. saute tomatoes in 2 T butter,, set aside 4. mix cottage cheese, crackers, herbs in a small bowl 5. put squash in a 2-qt casserole dish. Add 1/2 cheese mixture, all spinach, remaining cheese mix, then tomatoes. 6. Top with provolone slices. 7. Bake 375 degrees 30 min |
