I wanted to grill my squash (like always), but there was terrible storm that hit suddenly...squash casserole it is...this is my result. Ingredients:
2 medium yellow summer squash, cut into 1/4 slices |
1 small onion, thinly sliced |
1 egg |
1 c. sour cream |
1/4 c. garlic ranch dressing |
3/4 c. sharp cheddar cheese (or whatever you have on hand) |
parsley to taste |
1/2 c. panko bread crumbs |
1 tbsp. parmesean cheese |
1/2 tsp. paprika |
melted butter |
Directions:
1. In a large bowl add sour cream, dressing, cheese, parsley and egg. 2. Mix well. 3. Fold in squash and onion. 4. Pour mixture into an 8 x8 baker. 5. In a small bowl add bread crumbs, parmesean cheese and paprika. 6. Mix well. 7. Spread on top of vegetable. 8. Add melted butter on top of casserole to help brown. 9. Bake at 350 degrees for 30 minutes; until bubbly and browned. |
