Delicious light salad, perfect for summer barbeques. Ingredients:
1 bag spinach |
1/2 cup almonds |
2 cups sliced strawberries |
2 egg yolks |
1/2 cup sugar |
3/4 cup oil |
1/4 cup lemon juice |
Directions:
1. Wash spinach leaves. 2. Pat dry. 3. Transfer to salad bowl. 4. Toast almonds in frying pan until brown. 5. In small bowl, whisk egg yolks, oil, lemon juice, and sugar together, until sugar dissolves. 6. Just before serving, add strawberries, almonds, and egg yolk mixture to spinach, blending ingredients well. |
