Ingredients:
1 1/2 c chopped apricots or peaches
2/3 c chopped green pepper
2/3 c chopped red sweet pepper
3/4 c chopped seeded cucumber
1/4 c sliced green onion
1 - 2 seeded & chopped jalapeno peppers (handle carefully!)
2 t honey
2 t lime juice
1 t fresh cilantro or parsley
Directions:
1. Combine all ingredients in a medium mixing bowl.
2. Cover & chill up to 4 hours, stirring once or twice.
3. Yields: 2-1/2 cups
4. Can double.
