Summer Salad With Honeymustard Dressing |

A delicious salad for summer that can accompany barbecued meat or fish Ingredients:
1 bunch of rocket |
3 tomatoes |
1 tsp mustard |
1 tsp honey |
2 tbs olive oil |
salt and pepper (to taste) |
some fresh basil leaves |
some fresh oregano leaves |
2 tbs pine nuts |
2 tbs sunflower nuts |
zest of 1 lemon (or lime) |
2 tbs grated kefalotiri or parmezzano |
Directions:
1. Heat the honey for a little while to thin it. 2. Mix well with the mustard and olive oil. 3. Cut the rocket by hand, cut slices of tomatoes on top, add the dried nuts, aromatic herbs and lemon zest. 4. Sprinkle with the grated cheese, salt and pepper. 5. Pour the sauce over and serve. |
