Summer Salad With Chicken and Citrus |

This is a beautiful salad suitable for a light dinner. I would feel very comfortable serving this to guests. Ingredients:
4 cups spinach leaves |
4 cups mixed salad greens |
1 (15 ounce) can mandarin oranges |
8 ounces sugar snap peas, halved |
2 -3 cups cooked chicken, cut into 2 ",cubes |
1/2 cup pecan halves, toasted |
raspberry vinaigrette dressing, to taste |
Directions:
1. Toss all ingredients in large bowl. 2. Spoon onto 4 serving plates. 3. Great served with a raspberry vinaigrette. |
