Ingredients:
1/4 cup(s) extra virgin olive oil |
2 tablespoon(s) sun dried tomato infused oil from a jar of sun dried tomatoes |
1 tablespoon(s) red wine vinegar |
1/4 cup(s) sun dried tomatoes chopped |
1/4 teaspoon(s) kosher salt |
ground black pepper |
2 16 ounce(s) cans cannellini or great northern beans rinsed and drained |
1/3 cup(s) red onions diced |
2 clove(s) garlic minced |
6 basil leaves chopped |
1 ounce(s) manchego or romano cheese grated |
Directions:
1. To prepre vinaigrette, whisk together all ingredients in a small bowl. 2. To prepare beans, place beans in a large bowl, pour vinaigrette over beans, let stand at least an hour. Add onion, garlic, basil and cheese just before serving |
