Summer Quinoa Salad

from a food coop, their adaptation of a Moosewood Cookbook salad, feta nd dill is added , delightful and low fat
Ingredients:
1 cup quinoa
1 tsp olive oil
4 tsp fresh lime of lemon juice
1/4 tsp ground cumin
1/4 tsp ground corrinader
1 tbs frsh chopped cilantro ( or parsley )
2 tbs minced scallions
1 1/2 cup drained black beans or chickpeas
2 cup seeded diced tomatoes
1 cup sliced red, green, yellow bell peppers combo
2 tbs fresh chopped dill
1 1/2 cup crumbled feta cheese
salt and pepper to taste
Directions:
1. Cooked rinsed quinoa in the one cup of water till water is absorbed and tender, about 10 to 15 minutes
2. In a bowl, combine remainder of ingrdients and blend well.
3. Add the cooled quinoa , blend well and season to taste
4. Chill well prior to serving
