from a food coop, their adaptation of a Moosewood Cookbook salad, feta nd dill is added , delightful and low fat Ingredients:
1 cup quinoa |
1 tsp olive oil |
4 tsp fresh lime of lemon juice |
1/4 tsp ground cumin |
1/4 tsp ground corrinader |
1 tbs frsh chopped cilantro ( or parsley ) |
2 tbs minced scallions |
1 1/2 cup drained black beans or chickpeas |
2 cup seeded diced tomatoes |
1 cup sliced red, green, yellow bell peppers combo |
2 tbs fresh chopped dill |
1 1/2 cup crumbled feta cheese |
salt and pepper to taste |
Directions:
1. Cooked rinsed quinoa in the one cup of water till water is absorbed and tender, about 10 to 15 minutes 2. In a bowl, combine remainder of ingrdients and blend well. 3. Add the cooled quinoa , blend well and season to taste 4. Chill well prior to serving |
