Ingredients:

1/4 cup(s) cilantro, chopped |
0.5 teaspoon(s) cinnamon |
1 bunch(es) green onions, thinly sliced |
1 large cucumber diced |
1 lemon, zested & juiced |
1/4 cup(s) olive oil |
1.5 cup(s) quinoa |
1 red bell pepper, diced |
1 teaspoon(s) salt |
1 small red onion, diced |
Directions:
1. Place quinoa and broth in rice cooker or prepare by directions on package. Let completely cool before adding veggies. 2. Chop all veggies. Add veggies and seasoning to quinoa and mix well. Chill. |
