Summer Pepper & Fish Stew |

Brighten your table with this sweet and healthy pepper and fish stew. Ingredients:
2 garlic cloves, crushed |
1 onion, halved and sliced |
1 red pepper, sliced into strips |
1 yellow pepper, sliced into strips |
1 teaspoon olive oil |
2 tablespoons small capers, rinsed |
1/2 cup white wine |
2 cups chicken broth |
14 ounces tiny new potatoes, halved |
10 ounces raw shrimp |
14 ounces white fish fillets, cut into strips |
1 tablespoon basil, shredded |
Directions:
1. Fry the garlic, onion and peppers in a little oil until completely softened. Stir in the capers then add the wine, broth and potatoes and simmer until the potatoes are tender. 2. Add the shrimp and fish and cook for 3 minutes. Stir through the basil and serve in bowls with crusty bread. |
