From the Silver Palate Cook Book. Perfect for hot summer days when tomatoes are at their best and it is too hot to cook. Ingredients:
1 lb brie cheese (rind removed and torn into irregular pieces) |
4 large tomatoes (cut into 1/2 inch pieces) |
3 garlic cloves (finely chopped) |
1 cup good quality olive oil |
1 cup basil (cut in thin strips) |
2 1/2 teaspoons salt |
1 teaspoon ground pepper |
1 1/2 lbs linguine |
freshly grated parmesan cheese, to top |
Directions:
1. Combine tomatoes, brie, basil, garlic, olive oil, salt & pepper in a large serving bowl. 2. Leave covered at room temperature for at least 2 hours. 3. Just before serving cook pasta according to package directions, drain and and toss into the uncooked sauce, season to taste. 4. Plate and top with the Parmesan. 5. Prep time does not include sitting time. |
