A good meat loaf recipe, my kids loved it when they were little. Ingredients:
1/2 cup chopped onion |
1/2 cup shredded carrot |
1/4 cup chopped green pepper |
2 eggs, sightly beaten |
1 1/2 cups soft breadcrumbs |
1 cup cottage cheese, drained |
1 teaspoon salt |
1 teaspoon poultry seasoning |
2 lbs ground beef |
3/4 cup catsup |
1/3 cup brown sugar |
1 tablespoon dry mustard |
Directions:
1. In a small saucepan cook onion, carrot and green pepper in a small amount of boiling water 5 minutes or until tender. 2. Drain. 3. Combine with eggs, bread crumbs, cottage cheese, salt and poultry seasoning. 4. Add beef and mix well. 5. Pat into a 9 x 5 loaf pan. 6. Bake uncovered in 350 oven for 1 1/2 hours. 7. Pour off excess liquid. 8. In a saucepan combine catsup, mustard and brown sugar. 9. Heat through. 10. Serve meatloaf with catsup topping. |
