Summer Light Chicken Salad

A light dressing of lemon juice, oil and nutmeg makes this refreshing salad perfect for a hot summer day. Great for a light lunch. Land-O-Lakes Cookbook. Cooking time does not include cooking chicken. Prep time includes chilling.
Ingredients:
1/3 cup vegetable oil
1/3 cup lemon juice
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2 teaspoon fresh garlic, minced
2 1/2 cups cooked chicken, cubed
1 cup red seedless grapes, halved
1 cup celery, sliced
1/4 cup green onion, sliced
4 cups lettuce leaves, shredded
Directions:
1. in a jar with lid combine all dressing ingredients, shake to mix.
2. in large bowl combine all salad ingredients except lettuce.
3. toss salad with half of dressing, cover and refrigerate at least 1 hour.
4. place lettuce on serving platter, top with salad.
5. drizzle remaining dressing over salad and lettuce.
