Summer in the Country Ice Cream Sandwich Cookies

Nothing fancy here; in fact you can customize to suit your tastes and come out looking like a winner every time! Cooking time is for re-freezing the cookies after making them. You can skip this part if you're really impatient or the children NEED nourishment! Make a batch of your favorite cookies, then set a few pairs aside to make a special treat. Or how about being the Cool Mom who brings these to the next potluck or picnic? Wow, Mom! Excellent for a late night snack, star-gazing, or after an appointment with the lawn mower on a hot afternoon!
Ingredients:
2 cookies, medium sized (home-made or store-bought)
1/4 cup ice cream, slightly softened
1 tablespoon candy sprinkles
Directions:
1. Scoop ice cream into bottom-center of one cookie, heaped into the center. Press second cookie into heap, squeeze gently until the ice cream spreads to the edges. Use a bread knife to smooth edges.
2. Pour sprinkles into small bowl or plate (in a little heap). Roll ice cream edges of the cookies through the sprinkles (like a wheel) until all edges are covered with sprinks!
3. Freeze until treat-time. .
4. OPTIONS for the Ice Cream: chocolate, butter pecan, strawberry, rocky road, etc. You get the drift?.
5. OPTIONS for the cookies: chocolate chip, oatmeal w/raisins, sugar cookies, peanut butter, gingersnaps.
6. OPTIONS for the sprinkles: chocolate nonpareils, colored sugar, mini chocolate chips, mint chips, shaved chocolate, any nonpareils in your favorite color; chopped nuts or candy bars.
7. COMBINATIONS to try: strawberry ice cream on sugar cookies with red or pink sprinkles; chocolate chip cookie with butter pecan and chopped Heath candy bar; peanut butter ice cream with p-butter cookies and chopped peanuts.
