Summer Garden Squash and Sausage |

This was a quick little dish I threw together after finding a package of sausage in the freezer I didn't know I had. Great flavor. Pair with some garlic toast and call dinner done. Ingredients:
1 tablespoon olive oil |
6 cups summer squash, yellow and zucchini, sliced |
1 cup onion, chopped |
1/2 cup green pepper, chopped |
12 ounces turkey kielbasa, sliced in 1/2-inch coins |
salt and pepper |
1 teaspoon garlic powder |
1/8 teaspoon cayenne pepper |
1/4 teaspoon ground thyme |
1/2 teaspoon cumin |
1 cup french-fried onions |
Directions:
1. Heat olive oil in a large skillet. Saute onion and squash until almost tender, adding a little water if need be to prevent sticking. 2. Add sausage to pan, along with squash and brown about 5 minutes Add spices and continue till heated thru. 3. Serve with fried onions on top. |
