These parfaits work with any summer fruit (strawberries, blueberries, raspberries, blackberries, peaches, or nectarines). Mix and match whichever fruit is in plentiful supply. Ingredients:
3/4 cup fat free ricotta cheese |
3/4 cup fat free cream cheese |
3 tablespoons sugar |
1 1/2 cups of sliced peaches, peeled |
1 1/2 cups raspberries, crushed (reserve 6 for garnish) |
30 vanilla wafer cookies, crumbled |
Directions:
1. Combine ricotta cheese, cream cheese and sugar in a blender. Process until smooth, scraping sides of the blender once. Set aside. 2. Spoon 1/4 cup of peaches into each of 6 (8 oz) parfait glasses; top each with two tablespoons of ricotta mixture. Sprinkle 3 tablespoons cookie crumbs over ricotta mixture; top each with 2 tablespoons ricotta mixture. Spoon 1/4 cup crushed raspberries over the ricotta mixture. Top with one or more reserved raspberries. Chill at least 2 hours before serving |
