Summer Fried Tomatoes With Oregano |

Great side dish when the tomatoes are plentiful. Ingredients:
4 medium almost ripe tomatoes |
1/3 cup flour |
2 teaspoons cornmeal |
1 teaspoon oregano |
1/2 teaspoon salt |
1/4 teaspoon pepper |
4 teaspoons butter |
2 teaspoons parmesan cheese |
Directions:
1. Slice tomatoes 1/2 in thick. 2. Mix oregano with flour and cornmeal. 3. Salt and pepper slices. 4. Heat butter in skillet. 5. Dip slices in flour mixture. 6. Cook in butter over med low until light brown. 7. Sprinkle with parmesan cheese. |
