Summer Delight: Curry Chicken Salad |

This is easy to make and a nice change from regular chicken salads. I am not a big curry fan, so you can use more according to taste. The currants add a nice touch. Perfect on a hot summer night with lemon sorbet frozen in whole lemon shells. Enjoy Ingredients:
4 1/2 cups cooked and cubed chicken (i use deli chicken that i skin and bone) |
1/2 cup diced scallion |
1 cup currants |
1/2 cup slivered almonds |
1 cup mayonnaise |
1 -2 tablespoon curry powder (to taste) |
1/3 cup major grey chutney |
salt and pepper |
Directions:
1. Combine mayo, curry powder, and chutney. 2. Stir until smooth. 3. Mix dressing with chicken, scallions, currents and almonds. 4. Season to taste. 5. Chill for 1 hour. Serve cold over a bed of lettuce. |
